Au seuil de ma seizième année de chef, je me rends compte combien il m’est agréable d’avoir écrit et illustré ce « carnet de recettes ». Sans mystification, ni obscurantisme, je vous livre mes recettes car pour moi le plaisir de cuisiner et de manger passe par le partage.Now on the threshold of my 16th year as a chef in my own restaurant, I realise how much I have enjoyed writing and illustrating this " Recipe Booklet ". I am including simple, straightforward recipes in this booklet, because for me, I feel very strongly that the pleasure of cooking and eating involves the notion of sharing with orders.
